Carolina Kitchen: Fresh Salmon Patty with Homemade tartar sauce

Ingredients

  • 3 cans wild caught canned Salmon, liquid drained
  • 1/4 cup Shallots, chopped
  • 1/4 cup Celery, chopped
  • 1 tablespoon All Purpose Celtic Sea Salt®
  • 1/4 cup Gluten Free Panko Bread Crumbs
  • 1/4 teaspoon black pepper
  • 1 teaspoon Celtic Sea Salt®
  • 1-2 tablespoons coconut oil
  • 1 egg whisked

Tartar sauce

  • 1/4 cup paleo Mayonnaise
  • 1/2 cup Cornichon pickles, chopped
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon lemon juice
  • 1 pinch Celtic Sea Salt®
  • 1/4 teaspoon black pepper
  • 1/4 cup shallot chopped

Instructions

  1. In a large mixing bowl add the drained canned salmon, shallots, celery, All Purpose Celtic Sea Salt®, bread crumbs, pepper, Celtic Sea Salt®, and egg.
  2. Mix together with a fork until fully combined.
  3. In a large flat saute pan add the coconut oil then heat to medium heat.
  4. With your hands gather a small handful of the salmon mixture and form a round patty.
  5. Add the patty to the heated pan and repeat this step until several patties are formed (depending on the size of your pan).
  6. Allow to cook in the oil until golden brown, for about 2 minutes then flip over and cook until golden brown again.
  7. Removed each patty and place onto a paper towel lined plate.
  8. Repeat these steps until all the Salmon mixture is cooked.
  9. In a small to medium mixing bowl add the Mayonnaise, pickles, shallots, apple cider vinegar, lemon juice, pepper and Celtic Sea Salt® mix until fully combined.
  10. Serve patties hot with the tartar sauce on the side. Enjoy!
