Ingredients:

  • 1 half watermelon
  • quarter pound of feta cheese
  • 1/2 cup sliced almonds
  • 1 cup kalamata olive
  • 1/4 cup mint
  • 4 ounces balsamic vinegar

Instructions:

  1. Clean watermelon.
  2. Take half of the watermelon and cut into 1 inch by 1 inch cubes and place into bowl.
  3. Add almonds, olives and balsamic and toss to coat.
  4. Place on display plate or bowl and top with feta and thinly sliced mint and serve.
