Don't give up on that New Year's Resolution to get healthy just yet. Healthy Eating Specialist at Greenlife Grocery, Adam Budd, stopped by the morning show to share a recipe that's good, and good for you!
1 bunch/appr. 8 cups of Kale stemmed and sliced thin
3 cups of cabbage sliced thin
2 cups shredded carrot
1 cup red onion sliced thin
1 cup red bell pepper sliced thin
¾ raw sesame seeds
½ cup of honey
1/3 cup of miso
½ cup fresh lemon juice
Mix all vegetables together in a large salad bowl. In a separate bowl, whisk together honey, miso and lemon juice until blended. Then add dressing to the salad and serve.
