A love of meat has led to an entire week dedicated to celebrating it. Tis is the 10th Annual Meat Week.
It is primarily focused on barbecue and the cuts of meat that work best for it.
So this morning, News 13's Victoria Dunkle went straight to the experts at The Chop Shop Butchery in Asheville.
The team there says great barbecue starts with the right cut for what you want. They can also help you make sure you have enough to service your Meat Week crowd, then they say give it time.
You will a couple of days to do the wet or dry rub and the low and slow smoking.
The cold weather also has folks going for comfort foods like their fresh made sausages and braising cuts like briskets, short ribs, and ox tails. Click here for more information on The Chop Shop.
