Thanksgiving Day Side Dishes

Thanksgiving is next week, and while you may have bought your turkey, it's time to think about the other courses.
Sarah Kaye Mohammed of Greenlife Grocery stopped by our studios to share the recipes for a couple great Thanksgiving day side dishes.
Sarah's Fluffy Potatoes
4 large yukon potatoes (about 1 1/2 pounds)
3-4 tablespoons salted butter at room temperature
Optional: few sprigs fresh chives, minced (or other fresh herb)
Peel potatoes, and cut into medium sized cubes. Steam until fork tender. Push cooked potatoes through a ricer or mash with a masher into the butter and salt. Stir just until combined.
2 teaspoons Champagne vinegar
1 1/2 teaspoons finely chopped shallot
Pinch of coarsely ground black pepper
Pinch of sugar
1 teaspoon finely chopped fresh flat-leaf parsley
A dozen fresh oysters
Whisk together all ingredients, but the oysters, and set aside to serve on oysters. To open oysters, grip oyster with a towel in one hand, with the tiny tip pointing towards you. In your other hand, use your oysters knife, to probe into the small point on the oysters. Wiggle the knife back and forth, while pushing it in towards the oyster, until you feel the oyster shell loosen. Remove the shell, and slide knife under the oyster meat to loosen from the shell. Shuck all oysters, and serve with champagne sauce.
