The Dining Diva: Mexican street corn

Taking advantage of in-season produce, we're talking corn! Molly Fowler, The Dining Diva, grills up some Mexican street corn in the WLOS studio.

It's a side dish you can could use for a summer barque or even dinner party. The process is simple: lightly grill the corn and coat it in the "secret sauce".

RECIPE: Grilled Mexican Street Corn, Serves 4

4 Ears Shucked corn
¼ Cup Mayonnaise
¼ Cup Sour cream
2 tsp Lime zest
1 Tbsp Lime juice
¼ tsp Chili powder
½ tsp Ground cumin
½ Cup Finely grated Cotija cheese
¼ Cup Minced cilantro

Heat your grill to high heat. Lightly oil the ears of corn, and place over direct flame and grill, turning often, until nicely charred. Set aside.
While the corn is grilling, combine the mayonnaise, sour cream, lime zest and juice, chili powder and ground cumin. Mix well. In a shallow dish, combine the grated cheese and cilantro.
While corn is still hot, brush all over with the mayonnaise mixture. Then roll in the cheese and cilantro to cover. Serve at once with extra lime and cheese if desired.
