Christmas Confetti Eggs

12 eggs, hard-boiled and shelled
8 Oz Cottage cheese
1/4 Cup finely diced black olives
1/2 Cup finely diced green pepper
1/2 Cup finely diced red pepper
2 TBS minced onion
1/2 tsp each: ground black pepper, garlic powder
1 TBS powdered ranch dressing mix (optional)

  1. Slice the hard-boiled eggs in half, lengthwise, removing the yolks and placing them in a mixing bowl. Reserve the whites on a platter.
  2. Lightly mash the egg yolks, using a fork. To the mixing bowl, add the olives, peppers, onion, black pepper, garlic powder and ranch mix, lightly stirring to combine.
  3. Using a spatula, fold the cottage cheese into the mixing bowl until all ingredients are combined.
  4. Spoon equal portions of the filling into each egg half. Cover and refrigerate for one hour before serving.
