Christmas Confetti Eggs

Ingredients
12 eggs, hard-boiled and shelled
8 Oz Cottage cheese
1/4 Cup finely diced black olives
1/2 Cup finely diced green pepper
1/2 Cup finely diced red pepper
2 TBS minced onion
1/2 tsp each: ground black pepper, garlic powder
1 TBS powdered ranch dressing mix (optional)
Instructions
- Slice the hard-boiled eggs in half, lengthwise, removing the yolks and placing them in a mixing bowl. Reserve the whites on a platter.
- Lightly mash the egg yolks, using a fork. To the mixing bowl, add the olives, peppers, onion, black pepper, garlic powder and ranch mix, lightly stirring to combine.
- Using a spatula, fold the cottage cheese into the mixing bowl until all ingredients are combined.
- Spoon equal portions of the filling into each egg half. Cover and refrigerate for one hour before serving.
