Apple Butter Upside Down Cake

Ingredients
Apple topping:
1/2 Cup softened butter
2/3 Cup packed light brown sugar
1/2 teaspoon apple pie spice or cinnamon
1 teaspoon vanilla
2 medium peeled, cored and thinly sliced apples

Cake:
1 3/4 Cup all-purpose flour
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 Cup butter
1 Cup sugar
1 egg
1 Cup apple butter
1 teaspoon vanilla
2 tablespoons lemon juice
1 (5-ounce) can (2/3 Cup) evaporated milk 

Instructions
  1. Preheat oven to 350 degrees.
  2. In a small mixing bowl combine flour, baking powder, soda and salt; set aside.
  3. In another bowl beat butter on medium for 30 seconds.
  4. Add sugar; beat until fluffy. Add egg; beat well. Beat in apple butter and vanilla. In a measuring cup, stir the lemon juice into milk (mixture will curdle). Add flour mixture and milk mixture alternately to apple butter on medium speed after each addition.
  5. Pour batter over apple mixture.
  6. Melt 1/2 cup butter in a saucepan over medium heat.
  7. When it foams, add 1/2 teaspoon apple spice and 1 teaspoon vanilla. Stir over medium heat until sauce is smooth.
  8. Spread 2/3 cup brown sugar evenly in a baking dish. Tile apple slices in tight rows over the brown sugar then pour the butter mixture over top of the apples.
  9. Bake 35-40 minutes or until a toothpick inserted comes out clean. Loosen sides of pan with a knife and invert pan on a serving plate.
  10. Let pan sit for a minute so the excess caramel runs down the cake.
  11. Remove pan.
