Bacon Wrapped Pork Loin

1/2 C sugar
1/2 C salt
1/4 C paprika
2 Tbs chili powder
1 TBS Cumin
2 TBS black pepper
1 tsp granulated garlic
1 tsp onion powder
1/2 tsp chipotle powder
1 tsp mustard powder
1 pork tenderloin (approx 2lbs)
1 lb bacon
- Slice pork tenderloin about 1 1/2-2" thick (wider than your bacon)
- Season Pork tenderloin with above rub.
- Wrap each slice of pork with a slice of bacon.
- Skewer with a toothpick.
- Cover and let rest in refrigerator for at least 4-6 hours (overnight preferred)
