3/4 Cup chopped almonds
4 cloves garlic
1 Cup diced onion
1 TBS fresh cilantro leaves
1 tsp each: black pepper, cumin, sugar
Zest and juice of one lemon
1 TBS white wine
4 - 6 tilapia filets
2T olive oil
- In food processor, combine the almonds, garlic and onion, processing until fairly smooth. Add the cilantro, black pepper, cumin, sugar, lemon juice and zest and white wine, processing again until the ingredients form a paste.
- Coat each of the filets with the paste on both sides, placing in the refrigerator for one hour and thoroughly chilled.
- Heat the olive oil over medium-high heat in the skillet. Saut each filet until lightly browned and flakes easily with a fork, turning with the fish spatula.
