Red Eye Gravy

1 pot coffee
4 oz. chopped Carolina country ham
1/4 cup bacon fat
1/2 cup onion (diced)
1 tsp.garlic (minced)
2 T. local molasses

  1. Put bacon fat into hot pan, add in country ham
  2. Add fresh chopped Vidalia onions and local molasses (Ours is from The Asheville Farmers Market)
  3. Add in coffee (Of your choice)
  4. Cook down for about 2 to 3 minutes
  5. Take the drippings and put on top of a biscuit

Note: Also good with fried green tomatoes
