Carolina Kitchen: Lemon Spaghetti with Chicken

  • 1T bacon grease
  • 1# chicken breasts, boneless and diced
  • Salt & pepper to taste
  • 8 oz. spaghetti, cooked to directions
  • 1/2C olive oil
  • 1/2C parmesan cheese, grated
  • Zest of 1 lemon
  • 1/2C lemon juice
  • 1T dried basil
  • 2T capers
  • Salt & pepper to taste


  1. Over medium-high heat, melt the bacon grease in a small skillet.
  2. Season the chicken with salt and pepper and add to the heated pan.
  3. Brown on all sides, until cooked thru. Remove from pan and drain on paper towels.
  4. Set aside.
  5. Whisk the olive oil, parmesan cheese, basil, lemon zest and juice in a mixing bowl.
  6. Toss with the cooked pasta and the diced chicken.
  7. Season with salt and pepper, garnishing with the capers, sprinkled on top.
