  • 8 oz. dry pasta, cooked to directions
  • 1/2 cup diced tomatoes, seeded
  • 1/4 cup red onion threads
  • 2 TBS butter
  • 3 TBS pesto (homemade or purchased from grocery)
  • 1 - 1 1/2 cup heavy cream
  • Fresh grated Parmesan cheese to garnish


  1. Arrange cooked pasta in a pasta bowl/serving bowl. Sprinkle with the tomatoes and red onion. Cover loosely to keep warm.
  2. In a small sauce pot, melt the butter over medium heat. Add the pesto and whisk to combine until starting to bubble.
  3. Carefully pour in the cream while stirring. Continue to whisk and heat to a low simmer and the sauce begins to thicken, but DO NOT BOIL.
  4. Pour the sauce over the pasta in the bowl, garnishing with freshly grated Parmesan cheese. Serve immediately as a side dish with grilled chicken or pork.
