Neighborhood Eats: Blue Ridge Biscuit Company

Just about everyone loves a biscuit, but finding the perfect recipe is tricky. That's probably why Blue Ridge Biscuit Company has lines out the door nearly every weekend.

At this Black Mountain restaurant, biscuit connoisseurs won't be disappointed.

"Light, soft and flaky, a good size, great size, usually more than you can handle," customer William Martocci said of the star menu item.

Blue Ridge Biscuit Company has been serving biscuit-centric dishes for the last year-and-a-half.

"There will be people lined out the door. Probably I've seen at least 20 deep out the door," customer Cindi Davis said.

Along with basic biscuit options, Blue Ridge Biscuit Company offers mountain-themed biscuit sandwiches. Staff say "The Lookout" -- which is a biscuit with fried chicken, bacon, and cheddar cheese smothered in gravy -- is one of their most popular dishes.

The restaurant is the brain child of Mark Tomczack and Ed "EC" Clarey.

"Thought the place needed a really good breakfast, lunch place for people to hang out -- casual," Tomczack said.

EC is the baker between the two and knew selling the perfect biscuit would be no easy task.

"The biscuits were a hard thing because, you know, it's the South. Everybody takes their biscuits seriously," Clarey said. "I went through multiple recipes -- all the styles. I kind of adopted to a southern-style biscuit. We had a couple of things that we tweaked to make sure they're really soft and fluffy."

"You want that cold butter to steam it creates that pocket. So, it gets real light and fluffy inside. Gives you the rise," he explained.

The whole experience here is a labor of love from start to finish.

"You know, everybody says their mama's biscuits are the best, or their grandmother's. A lot of that has to do with the care of it, letting people know that it's in there," Clarey said. "You can taste it. You can taste the love in the food."

Blue Ridge Biscuit Company is located at 601 W. State Street in Black Mountain. They are open Tuesday-Friday from 7 a.m.-2 p.m. and Saturday-Sunday from 8 a.m.-3 p.m.
