If one of your New Year's resolutions is to eat healthier, an eatery in Flat Rock might be just the ticket.

Honey and Salt opened less than a year ago in March 2017. In that short amount of time, it has taken the little town by storm. News 13 stopped by on a Thursday morning, and there wasn't a seat in the house. But customers we spoke with said the food is well worth the wait.

"Too many places, people want quick food and the quick food doesn't necessarily mean healthy," customer Steve Robbins explained.

Erin Hill and her husband opened Honey and Salt with one mission in mind.

"We really wanted to highlight local food and seasonal food, because it's important to eat seasonally," Hill explained.

Although the ingredients are new and fresh, the eatery gets its name from someone with a little history in Flat Rock -- Carl Sandburg.

""Honey and Salt' is actually one of the names of his poems and a book," Hill said. "And it's a love poem that he actually wrote to his wife about things that go together."

Erin and her family moved to Flat Rock after spending 10 years in Virginia.

"We were ready to get out of the city. We have three little girls. We're very outdoorsy, and we love the mountains," she explained.

Erin has a medical background and has channeled her healthy lifestyle at Honey and Salt.

"Just from being a nurse and raising my kids really healthy," she said. "We eat healthy and it feels like, with all the farms and farmers and local food and supporting, you know, everything has just gotten so big."

Just ask the Robbins, who have been regulars since the restaurant opened. Jane said she always gets the "Green House."

"It's got avocados and eggs and quinoa and fresh greens. It's just delicious, and you feel so healthy after you eat it," she explained.

Heather Leyton was enjoying a quinoa vegetable bowl with an egg on top.

"It's delicious. It has some roasted vegetables, kale and sweet potatoes and raisins. I feel healthy," Leyton said with a laugh.

Erin told us that everything they serve is made in house.

"We have a bake house underneath here. So, I have bakers than come in every morning, make our own biscuits, our own breads, our own daily muffins, our own granola," she explained.

Alongside the unique dishes and flavor combinations are your standard breakfast options, like eggs and bacon. Click here to check out their menu.
