Former Storm chef to open steakhouse with a seasonal menu in 2020

Asheville foodies can expect a new restaurant in the Historic Grove Arcade in early 2020.

Chef Owen McGlynn, former executive chef of Storm Rhum Bar and Bistro, announced in a release plans to open Asheville Proper, a "live-fire cooking concept."

The restaurant, described in the release as "an unconventional approach to the classic American steakhouse" will feature an a la carte menu of cowboy ribeye, NY strip, flamed brussels sprouts, charred pickled shrimp, smoked cauliflower and more. The menu will reportedly change regularly and feature locally-sourced ingredients from places like Hickory Nut Gap, Apple Brandy Beef, and more.

"Working as an executive chef for the last eight years in Asheville has taught me so many invaluable lessons and I want to be able to take what I have learned and share it with the community I love through Asheville Proper," McGlynn said in the release. "I look forward to showcasing how fun and delicious it is to cook over a flame powered by wood; it's truly an art form that deserves to be shared."

Upholding the history of the Grove Arcade, Asheville Proper's design plan by Ashley Diggelmann is set to feature details of Art Deco, including an "eclectic mix of 1920-inspired lighting" and velvet banquettes.

"Through Owen's menu and the interior design, we want Asheville Proper to be a place where people feel welcomed," added Russel Joseph in the release, owner and managing partner at Asheville Proper. "I look forward to the restaurant becoming a place of community, where we have the opportunity to get to know our guests, share our story and make them feel at home."

According to the release, McGlynn and his wife, Mindi, partnered with Joseph and his wife, Mercy, to open the restaurant.

In addition to formerly serving as the executive chef at Storm for eight years, McGlynn served as the sous chef at High Cotton in Charleston and Greenville, South Carolina for 12 years.
